 1. How to Make OSP Crisps

Ingredients:
-          - Fresh sweet potato roots.
-          - Cooking oil.
-          - Salt.
Note: Grate/chop the orange sweet potato storage roots after thoroughly washing them.
Procedure:
1.       Set the cooking oil to the heating point.
2.       Deep the grated chippings into the heated oil. Keep the chippings with the frying handle until ready.
3.       Remove the heated crisps from the frying pan and place them at the point where the oil on the crisps can be drained .
4.       Sprinkle desired salt on the crisps while still oily. Let the crisps drain for some time (1 hours at most ) so that it can s tore longer.

2. How To Make | OSP Flour.
 
1.       Select mature, fresh, healthy and medium to large sized Orange Sweet Potato roots of the same variety. Use a knife to trim all the unwanted parts of the Orange Sweet Potato roots such as damaged parts, auxiliary roots e.t.c 

2.      Use a nylon rag or hand brush to thoroughly scrub and wash the skin of the Orange Sweet Potato roots in clean water. Pre-dry the washed roots in the sun to drain off excess moisture from root surface.



3.       Use a clipper, grater or knife to cut the roots into thin pieces that dry fast (Chips) 

4.       Spread the chips on a clean surface such as trays, polythene sheet or dryer in the open sun. Keep turning the drying chips that should thinly spread on the drying  surface until it is impossible o squeeze moisture out of the sweet potato chips. At this point, the chips are brittle and break easily.
5.       Sort the dried chips by hand to remove any discolored and under dried chips. Pack the dried pieces in opaque bags and seal them. Store in a cool, clean and dry place with limited sun light.
6.       Mill the dried chips into flour of required particle size. Pack the flour in clean bags and seal properly, store in a cool dry place.
